摘 要 對28份澳洲堅果種質(zhì)果皮的粗蛋白、可溶性總糖、單寧以及8種礦質(zhì)元素(P、K、Ca、Mg、Zn、Cu、Fe、Mn)等內(nèi)含物的含量進行了測定與研究。結(jié)果表明:澳洲堅果果皮內(nèi)含物含量在不同種質(zhì)之間變化較大,變異系數(shù)在15.75%~48.33%之間,變異幅度以可溶性總糖含量最大、Ca含量最小;除Fe、Cu元素外,其它6種礦質(zhì)元素之間存在顯著的正相關(guān)或負相關(guān)關(guān)系;聚類分析將28份種質(zhì)分成4個具不同內(nèi)含物含量特點的類群。

Abstract The contents of crude protein,total soluble sugar,tannin and eight mineral elements(P,K,Ca,Mg,Zn,Cu,F(xiàn)e and Mn)in husks of 28 macadamia germplasm resources were measured and investigated. The results showed that the substances contents in macadamia husk had a large variation among all tested germplasm resources with variation coefficient of 15.75%~48.33%. The variation range in the content of total soluble sugar was the widest,while that in Ca was the narrowest. Excluding Fe and Cu,there were significant positive or negative correlations between the other six mineral elements. Based on the hierarchical cluster analysis,28 macadamia germplasm resources were divided into four groups with different characteristics of the substances content.

澳洲堅果(Macadamia spp.)原產(chǎn)澳大利亞,是山龍眼科(Proteaceae)澳洲堅果屬(Macadamia F. Mull)常綠喬木果樹,其種仁富含不飽和脂肪酸、蛋白質(zhì)、礦質(zhì)元素以及多種維生素等,具有重要的營養(yǎng)價值和保健價值,被譽為世界“堅果之王”。 近年來,澳洲堅果在國際市場上供不應(yīng)求,價格倍增。作為一種新興的高檔堅果類果樹,澳洲堅果正在為越來越多的國家和地區(qū)所重視。而在的中國云南、廣西、廣東等省(區(qū)),澳洲堅果也已廣泛種植,其種植面積和產(chǎn)量迅速增加。
澳洲堅果果實主要是由果皮、種殼和種仁所組成,其初加工的主要副產(chǎn)物是果皮與種殼,其中果皮約占果實鮮重的1/2,種殼則約占帶殼果干重的2/3。近年來,國內(nèi)外對澳洲堅果種仁的營養(yǎng)成份[1-4]及其保健價值[5-6]和種殼的功能性組分[7-9]及其開發(fā)利用[10-12]等方面的研究報道較多。雖然張明楷[13]等人對6個澳洲堅果品種的果皮粗蛋白、可溶性糖及單寧含量的差異情況做了簡單報道,但涉及的種質(zhì)數(shù)量相對較少,分析形式也較單一。……
