[摘 要]以福建省餐飲企業為調查對象,通過訪談法和實地考察法探討閩菜館海外繁榮發展過程中存在的問題,進而提出推動閩菜館海外繁榮發展的對策建議:建立閩菜館品牌形象識別系統,建立海外閩菜館配套評價與規范體系;推進閩菜館標準化體系建設,加快海外閩菜館連鎖化發展;設立政策扶持配套資金,加強閩菜文化宣傳;完善人才培訓體系,加強閩菜人才培養與培訓;堅持“引進來”和“走出去”相結合,加強閩菜全產業鏈交流合作;委托行業協會制定“福建菜走出去示范企業、示范店”評選標準,并組織相關評選及表彰。

Study on Overseas Prosperity and Development of Fujian Cuisine Museum

Abstract: Based on the investigation of the catering enterprises in Fujian Province, this paper explores the problems existing in the overseas prosperity and development of Fujian cuisine restaurants by means of interviews and on-the-spot investigations, and then puts forward some policy suggestions for promoting the overseas prosperity and development of Fujian cuisine restaurants, including: establishing the brand image recognition system of Fujian cuisine restaurants, and establishing the matching evaluation and norms of overseas Fujian Cu System; Promote the construction of standardization system of Fujian cuisine libraries, speed up the chain development of overseas Fujian cuisine libraries; set up supporting funds for policy support, strengthen the cultural propaganda of Fujian cuisine; improve the talent training system, strengthen the training and training of Fujian cuisine talents; adhere to the combination of “introduction” and “going out”, and strengthen the exchange and cooperation of Fujian cuisine industry chain. To entrust industry associations to formulate selection criteria for “Fujian cuisine going out demonstration enterprises and demonstration stores”, and organize relevant selection and recognition.

福建省是著名的僑鄉,在海外從事中餐業的閩籍華僑數量眾多,在全世界40多萬家中餐館中,近17萬家中餐館由閩籍僑胞經營。加快塑造閩菜館的良好國際形象,提升閩菜館在世界范圍內的影響力,實現閩菜館品牌化、標準化、連鎖化發展對于進一步推動閩菜館海外繁榮發展具有重要意義。
