The world is actually suffering a food crisis with this population set to rise to nine billion, and that means we will have to double our food...food supply. That means that can be very 1)devastating to Mother Nature. Now, experts believe that we should actually turn to a more sustainable source of food, and that being insects. Like I said, you’ll find them in your garden. Now, insect cuisine could be the next big food trend, and would you eat bugs if they are tasty?
Reporter: 2)Foodies looking for the next big trend in eating? Listen up.
That’s the sound of the biggest trend in dining right now. Insects are worming their way into food all over the country. There’s [sic] cricket bars, and even something called “The Grasswhopper.” But this isn’t “Fear Factor” for foodies. Ants, worms and more are being used in restaurants all over the country. And if you don’t know what a “3)chipolina” is, one might creep onto your plate or onto your drink before you ever realize it’s a grasshopper.
Chef: Well, those are the 4)chicatanas. They come out of the nest once a year when the rain season, it starts. The chicatanas we use in the, in a [sic] ant salt, we sprinkle over the 5)guacamole and we make moles or some sauces out of them. The 6)guisanos we use on salads and a...and a couple of our dishes. Those are 7)cured in salt and we put it in on some plates.
Reporter: I never even had one in a 8)tequila or anything, so I’m gonna give this a try.
They’re really good! Here, let me give it a shot.
At the Black Ant Restaurant in New York City you could say insects are a bit of a theme. Customer: The theme has been really good for business.
Reporter: But it’s not just a 9)gimmick to get people in the door.
Chef: We have some insects in a, on our table. The insects from Mexico is [sic] a really important part of the restaurant.

Arthur Bovino (Exec Editor, the Daily Meal): So, yes, there’s an aspect of shock value, but it’s also us catching up with what’s going on around the world.
Reporter: So, if you’re looking for an 10)entrée into the insect dining world...
Arthur: This is...this is the gateway bug. Cheers.
Reporter: Cheers.
Arthur: I think grasshoppers are...maybe the chicken of the insect world.
Reporter: This is mostly bug. This isn’t, like, a lot of different things. This is like worms on a pizza.
Arthur: Insects could be a lot more sustainable source of protein for us going forward, when we’ve got population increase.
Host: Does the thought of insects on your platter leave you squirming in your seats? The thought of eating beetles, caterpillars and worms may give you the creeps, but more than one thousand nine hundred species of insects are eaten around the world. Although they are a valued source of protein in many tropical regions, people in the West generally turn their noses up at the likes of grasshoppers, termites and other crunchy fare. But, the tide is turning. According to Arnold von Haisen, 11)entomologist at Wageningen University in the Netherlands, insects can potentially provide food security to the world.
Arnold: Well there are numerous advantages of eating insects, especially environmental advantages, greenhouse gas emissions, land use, etc. We need alternatives because 70% of all agricultural land is already used by livestock.
Host: The question is, could you handle a 12)creepycrawly on your plate for breakfast? In the future, you may just not have a choice.
