摘 要 探討劍麻提取液在臺灣青棗果實貯藏保鮮上的作用。以劍麻提取液為材料,浸泡處理臺灣青棗采后果實,然后在常溫條件下貯藏,研究劍麻提取液處理對臺灣青棗果實采后生理及品質的影響。結果表明:劍麻提取液處理可有效降低果實失重率和腐爛率,延緩果實硬度、可溶性固形物含量、維生素C、可滴定酸的下降,保持了果實的品質;同時,劍麻提取液處理還提高了采后貯藏臺灣青棗果實POD、CAT活性,減輕了臺灣青棗細胞膜脂過氧化程度,從而有效延緩果實的衰老;劍麻提取液在臺灣青棗貯藏保鮮上有良好的保鮮效果。

Abstract The objective of the study is to investigate the effect of Agave americana leaf extracts on the storage of Ziziphus mauritiana Lamk(Taiwan green jujube). The fruits were soaked with Agave americana leaf extracts,and stored at(25±1)℃. The changes of postharvest physiology and fruit quality during storage were investigated. The results showed that A. americana leaf extracts treatments could significantly reduce rotting rate and weight losse, and increase SOD and CAT activity of the frui to reduce the degree of cell membrane lipid peroxidation. A. americana leaf extracts could delay fruit senescence and had a good fresh-keeping effect on Taiwan green jujube.

臺灣青棗(Ziziphus mauritiana Lamk)又名毛葉棗、滇刺棗、印度棗等,屬鼠李科棗屬常綠果樹[1]。其果實營養豐富,風味獨特,富含大量維生素C、維生素B、胡蘿卜素、鈣、磷及少量核黃素等[2-3],是一種極具發展前景的果樹。在中國云南、海南、廣東、福建、廣西、浙江等省(區)均有種植,且面積逐年擴大,產量不斷上升[4]。但是,臺灣青棗果實極易軟化、失水皺縮、果面易黃化和褐變,果實易發病腐爛,嚴重影響果實的商品價值和使用品質,給果實的貯藏、運輸和銷售帶來了很大的困難[5-6],嚴重制約了該產業的進一步發展。
劍麻作為一種纖維作物,含有豐富的甾體皂苷和果聚糖等物質,且有報道該類物質在醫學領域有很重要的作用[7],其中果聚糖可以降低膽固醇,甾體皂苷對癌癥、低血糖癥、免疫系統和心血管疾病具有預防和控制的作用[8]。……
