






摘要探究不同貯存樓層對(duì)龍江911片煙醇化進(jìn)程和醇化質(zhì)量的影響,將龍江911片煙貯存于河南新鄭自然醇化庫(kù)的不同樓層,即5號(hào)庫(kù)1層(5-1)、5號(hào)庫(kù)3層(5-3),研究醇化過(guò)程中片煙的化學(xué)成分和感官質(zhì)量的變化。結(jié)果表明,隨著醇化的進(jìn)行,不同樓層醇化片煙的pH及總糖、還原糖、總氮、總植物堿、質(zhì)體色素和多酚類物質(zhì)含量均呈波動(dòng)降低趨勢(shì),碘值吸光度值呈增加趨勢(shì)。醇化過(guò)程中,5-3處理片煙的pH及總糖、還原糖和質(zhì)體色素含量降幅均高于5-1處理,5-3處理片煙的碘值吸光度值增幅高于5-1處理。不同樓層醇化庫(kù)片煙的感官質(zhì)量得分先上升后下降,5-1和5-3處理的片煙感官質(zhì)量分別在醇化27、24個(gè)月時(shí)達(dá)到最佳,且5-1處理的保質(zhì)效果優(yōu)于5-3處理。

AbstractTheaimofthisstudywastoexploretheinfluenceofdifferentstoragefloorsontheagingprocessandqualityofflue-curedtobaccoofLongjiang911.ThetobaccostripsoftobaccocultivarLongjiang911werestoredatdifferentfloorsinXinzhengwarehouseofHenanProvince:thefirstfloorofwarehouseNo.5(5-1),thethirdfloorofwarehouseNo.5(5-3).Thedynamicchangesofchemicalcontentsandsensoryqualityoftobaccostripswerestudied.TheresultsshowedthatthepHvalue,totalsugar,reducedsugar,totalnitrogen,totalplantalkaloid,plastidpigmentandpolyphenoldecreased,whiletheiodineabsorbencyvalueincreasedwiththeincreasingofagingtime.Intheprocessofnaturalaging,thedecreaseofpHvalue,totalsugar,reducedsugarandplastidpigmentcontentsoftobaccostripsunder5-3treatmentwerehigherthanthatof5-1treatment,andtheincreaseofiodineabsorbencyvaluesof5-3tobaccowerehigherthanthatof5-1treatment.Thesensoryqualityscoreshowedthetrendofrisingfirstandfallinglater.Thesensoryqualityoftobaccostripsagedunder5-1and5-3warehousesreachedthebestatthe27and24thmonths,respectively.Thequality-preservingeffectofthe5-1treatmentwasbetterthanthe5-3treatment.

片煙醇化是從田間煙葉生產(chǎn)到卷煙工業(yè)生產(chǎn)鏈條中一項(xiàng)重要環(huán)節(jié),通過(guò)醇化可以改善片煙的外觀質(zhì)量和內(nèi)在品質(zhì),滿足卷煙工業(yè)生產(chǎn)需求[1]。片煙的醇化進(jìn)程和質(zhì)量受到醇化時(shí)間和環(huán)境溫、濕度影響[2]。研究表明,溫、濕度對(duì)煙葉含水率、微生物群落結(jié)構(gòu)和酶活性產(chǎn)生影響,進(jìn)而影響煙葉化學(xué)成分變化和醇化進(jìn)程[3]。王毅等[4]研究發(fā)現(xiàn),環(huán)境溫濕度高,醇化過(guò)程中煙葉化學(xué)成分變化較快,能在較短時(shí)間內(nèi)達(dá)到最佳感官評(píng)吸品質(zhì)要求。陳頤等[5]研究表明,月平均溫濕度較高的環(huán)境條件能加速片煙化學(xué)成分變化,縮短片煙達(dá)到最佳醇化質(zhì)量的時(shí)間。……
