摘要:為探究不同通透性保鮮膜對香菇保鮮效果的影響,以采后新鮮香菇為原料,分別以市售低通透性保鮮膜(旭包鮮PVDC保鮮膜)、中通透性保鮮膜(楓康PE保鮮膜)、高通透性保鮮膜(七彩陽光PVC保鮮膜)為包裝材料對香菇進行包裝,將其置于4℃環(huán)境中進行貯藏試驗。結(jié)果表明,與PVC保鮮膜相比,PE保鮮膜和PVDC保鮮膜均顯著降低了香菇失重率(P<0.05);PE保鮮膜顯著抑制香菇的呼吸作用,延緩香菇中VC含量與多糖含量的降低,抑制細胞膜滲透率、丙二醛含量及內(nèi)源性甲醛含量的升高(P<0.05);3種不同通透性保鮮膜以PE保鮮膜保鮮效果最佳。

Effects of Different Permeability Films on
Fresh-Keeping of Lentinus edodes

AbstractTo explore the effects of different permeability films on fresh-keeping of Lentinus edodes, with the fresh L. edodes as experiment materials, the storage experiments were conducted under the 4℃ environment with low permeability film (PVDC), medium permeability film (PE) and high permeability film (PVC) respectively.The results showed that, compared with PVC film, PE film and PVDC film could significantly reduce the weight loss rate of L. edodes(P<0.05); PE film significantly inhibited the respiration of L. edodes, delayed the reduction of VC content and polysaccharide content in L. edodes, and inhibited the cell membrane permeability, malondialdehyde content and endogenous formaldehyde content increasing (P<0.05). The PE film had the best fresh-keeping effect among the 3 different permeability films.

香菇(Lentinus edodes)又名花菇、香蕈、冬菇,隸屬于真菌界、真菌門、擔子菌綱、側(cè)耳科、傘菌目、香菇屬[1]。香菇營養(yǎng)豐富,富含蛋白質(zhì)、糖類、維生素及礦物質(zhì)等多種營養(yǎng)物質(zhì)[2],具有促進機體新陳代謝,增強人體免疫力,降低血壓、血脂,防癌抗癌等功效[3],素有“菇中之王”的美稱[4]。
采后香菇脫離母體,仍是活的有機體,流通過程中其生命代謝活動仍在有序進行。香菇水分含量較高,組織柔嫩,表面沒有保護結(jié)構(gòu),極易受到傷害,呼吸作用與蒸騰作用強烈[5-7],在整個物流過程中營養(yǎng)價值和經(jīng)濟價值急劇下降,嚴重損害商品質(zhì)量和貨架壽命,給生產(chǎn)和運輸造成極大損失和制約,物流保鮮技術(shù)已成為產(chǎn)業(yè)的迫切需求。
不同材質(zhì)的保鮮膜,由于化學成分不同,其通透性各異[8]。選擇適宜的保鮮膜對香菇進行包裝,不僅可以減少香菇體內(nèi)的水分散失,降低其失重率,而且還能夠調(diào)節(jié)包裝環(huán)境內(nèi)的氣體成分變化,形成適宜的高CO2、低O2微氣調(diào)環(huán)境[9,10],抑制香菇采后代謝強度,降低營養(yǎng)物質(zhì)的損耗,延緩香菇品質(zhì)劣變的速率,延長香菇的保鮮期限[11]。……
