摘 要:為了研究裝煙密度對(duì)烤后煙葉品質(zhì)及評(píng)吸質(zhì)量的影響,為密集烤房烘烤工藝完善提供依據(jù),設(shè)低密度(裝鮮煙50kg/m3) 、中密度(裝鮮煙60kg/m3) 、高密度(裝鮮煙70kg/m3) 3個(gè)裝煙密度,對(duì)比分析了裝煙密度對(duì)烤后煙葉外觀質(zhì)量、經(jīng)濟(jì)性狀、化學(xué)成分及感官評(píng)吸品質(zhì)的影響。結(jié)果表明:(1) 裝煙密度為中密度時(shí),煙葉結(jié)構(gòu)疏松,顏色金黃至橘黃,色度強(qiáng),烤后煙葉的外觀質(zhì)量表現(xiàn)較好。(2)裝煙密度為中密度時(shí),上等煙和中等煙比例最高,均價(jià)最高,經(jīng)濟(jì)效益最高。(3)提高裝煙密度能夠極顯著地降低煙葉還原糖和淀粉的含量,中密度處理的糖堿比表現(xiàn)最好,最為接近優(yōu)質(zhì)煙葉標(biāo)準(zhǔn)。(4)中密度處理的煙葉香氣量和勁頭最好,感官評(píng)吸質(zhì)量最佳。綜合認(rèn)為,烤煙密度為60kg/m3時(shí)最佳。

The Effect of Different Loading Density on Tobacco Quality and Sensory Evaluation Quality

Abstract:In order to study the effect of loading density on tobacco chemical components and smoking quality,we designed three different loading densities(50kg/m3,60kg/m3 and 70kg/m3) and tried to identify the best one for tobacco quality. The results were as follows:(1) in the medium loading density,tobacco leaf structure was loose,the color was yellow to orange,and the appearance of the tobacco leaf quality performance was better.(2) In the medium loading density,the rate of high-grade and middle-grade tobacco leaves was highest among these three different treatments,and the economic return was also better.(3) Improving the smoke density could significantly reduce tobacco reducing sugar and starch content. The sugar/nicotine ratio of medium density treatment was the best.(4) In the medium loading density,tobacco aroma and momentum were the best,sensory evaluation scores highest quality. Comprehensive thought,flue-cured tobacco best when density is 60kg/m3.

煙葉是卷煙工業(yè)的基礎(chǔ),煙葉質(zhì)量的好壞直接影響卷煙產(chǎn)品的質(zhì)量[1]。近年來(lái),隨著我國(guó)煙葉生產(chǎn)規(guī)模的不斷擴(kuò)大和煙葉產(chǎn)量的不斷提高,傳統(tǒng)烤房的缺點(diǎn)日益顯現(xiàn),而密集烘烤方式在各煙葉生產(chǎn)區(qū)迅速發(fā)展[2]。與普通烤房相比,密集烤房由于裝煙密度大,使得烘烤用工量大大減少,烘烤成本相應(yīng)降低。而且由于烘烤過(guò)程中采用了自動(dòng)控制風(fēng)速、溫度、濕度的設(shè)備,煙葉的烘烤質(zhì)量也明顯提高[3]。烤房的裝煙密度是衡量密集式烤房烘烤能力的關(guān)鍵因素[4]。不同裝煙密度和裝煙方式對(duì)烤后煙葉的化學(xué)成分、外觀質(zhì)量和經(jīng)濟(jì)性狀有顯著的影響[5-6]。……
