摘要:香椿(Toona sinensis)種芽生長到2.5、5.0、7.5 cm時,噴施0、50、100、150 mg/L的亞硒酸鈉,調查其生長和品質的變化。結果表明,噴施亞硒酸鈉促進了香椿種芽生長,鮮重、干重分別是對照的1.52~1.82倍、1.42~1.69倍;可溶性蛋白質、可溶性總糖、維生素C、葉綠素和類胡蘿卜素含量均有增高趨勢。可溶性蛋白質含量升高最多,是對照的1.38~3.09倍;香椿種芽的纖維素含量下降明顯,最多下降達37.5%;香椿種芽鉀和硒的含量大幅度增加,分別是對照的1.95、2.32、2.58倍和17.92、30.00、44.75倍。

Effect of Sodium Selenite on Growth and Quality of the Sprout of Chinese Toona (Toona sinensis)

Abstract: To test the effect of sodium selenite on the growth and quality of sprout of Chinese toona(Toona sinensis),different concentrations of sodium selenite(0, 50, 100, 150 mg/L) were sprayed on the sprout of toona when their heights were 2.5, 5.0 and 7.5 cm, respectively. The results showed that the height,dry weight of sprout rised to 1.52~1.82 times and 1.42~1.69 times respectively; And the content of soluble protein, total sugar, chlorophyll and vitamin C increased. The greatest increase was achieved in soluble protein, 1.38~3.09 times of the control. The content of potassium and selenite in the sprout of toona increased remarkably by 1.95, 2.32, 2.58 and 17.92, 30.00, 44.75 times of the control respectively. However the level of cellulose decreased dramatically up to 37.5%.

硒是人和動物必需的營養元素之一,它對人類的健康具有重要作用[1-3]。1988年10月中國營養學會規定硒的人日最低需要量為75 μg,據13個省(市)營養調查,成人每天的攝硒量為26.63 μg。中國72%的地區屬缺硒和輕度缺硒地區。缺硒與人的40多種疾病密切相關,適當補充硒可防治癌癥及克山病、大骨節病等多種地方性疾病。大量研究證明,硒與抗病(克山病、心腦血管病、糖尿病、精神病、AIDS)、防衰老、提高免疫力、抑癌細胞增生、骨骼生長、生殖能力等有密切關系[1-4]。
以香椿(Toona sinensis)種芽為材料,其具有清香宜人、生長迅速、產量高、適于工廠化生產、方便推廣等優點。借鑒于富硒茶、富硒麥芽、富硒豌豆的生產方式[5-7],探討噴施亞硒酸鈉對其生長及營養品質的影響,為開發簡便安全的富硒食品提供參考。
1材料與方法
1.1香椿種芽的培育與處理
種子選用河南省西峽縣當年產、發芽良好的香椿(紅油椿)種子。采用發芽盤(長、寬、高分別為60、13、5 cm)育苗,每盤50 g種子;種子在水中浸泡4 h,瀝干后均勻平鋪在鋪有報紙的發芽盤內育苗,覆蓋薄膜,保持RH≥70%;……
