重慶火鍋，又稱毛肚火鍋或麻辣火鍋，系四大菜系之一的川菜系飲食，是中國傳統(tǒng)飲食方式之一。重慶火鍋起源于明末清初的重慶嘉陵江畔、朝天門等碼頭船工纖夫的粗放餐飲方式，其主要原料是毛肚、鴨腸、牛血或者鴨血等。

The origins( 起 源) of Chongqing hot pot can be traced back to the late Ming and early Qing dynasties.It is said that during that time, the boatmen working along the Jialing River and the Chaotianmen Wharf would cook food by boiling it in a large pot.The boatmen would add different spices and other ingredients to the hot pot.The spices are the soul of the hot pot, which can help drive away the coldness and dampness(濕氣).
