


Research on Operation Mode and Construction Path of Prefabricated Food Supply Chain in China

摘" 要:預制菜供應鏈的發展,推動了餐飲行業工業革命,順應了疫情背景下“懶宅經濟”發展的浪潮。目前,我國預制菜供應鏈逐步建立,探索形成了一體化供應鏈、第三方供應鏈、混合式供應鏈三種運行模式。文章采用案例分析方法,發現了預制菜供應鏈構建的三重邏輯,即服務邏輯、行業邏輯和產品邏輯,實現了大客戶定制化開發、品類市場擴張和核心單品突破的多重目標,為龍頭企業構建預制菜供應鏈提供了有效路徑參照。

Abstract: The development of the prefabricate food supply chain has promoted the industrial revolution of the catering industry and conforms to the development tide of the \"lazy home economy\" under the background of the epidemic. At present, the supply chain of prefabricated food has been gradually established in China, and three operating modes of integrated supply chain, third-party supply chain and hybrid supply chain have been explored and formed. This paper uses the case analysis method to find the triple logic of the construction of prepared food supply chain, that is, the logic of service, the logic of industry and the logic of product. It realizes the multiple goals of customized development of key customers, category market expansion and core single product breakthrough, and provides an effective path for leading enterprises to build the prepared food supply chain.

隨著人們生活質量的提升、可支配收入的增加以及生活節奏的加快,加大了人們對于預制菜品的偏好程度。所謂的預制菜是以農、林、牧、漁等領域的可食用產品為原料,搭配各種調味料制成的成品與半成品,具有便捷、快速、營養、美味的特點,更好地滿足了消費者多樣化的消費需求[1]。但是,目前我國預制菜行業呈現行業規模大、集中程度低、企業規模小、參與主體多的發展態勢,尚未形成全國性的預制菜龍頭企業。同時預制菜供應鏈在運行過程中仍然存在很多問題,比如原料供應不穩定、供應鏈上下游協同能力不足、食品安全管理體系不完善等,導致預制菜品的終端銷售市場在價格、質量和供需方面不穩定,故說明了我國預制菜供應鏈仍然處于較為傳統和落后的階段。……
