The traditional local snack can be called the catering culture handed down by the older generations whose rich and unique life wisdom is glorifi ed through the inheritance of the snacks. The locals draw on local resources to deal with the food materials by their own means. The familiar appetizing snacks can go to the very heart of each diner through the memory of the taste, which interprets not only the local customs but also the locals’persistence to their conventional dining. So to speak, the traditional snack is one of the local “calling cards”. Therefore, the best way of Do As the Romans Do is to take an authentic snack when visiting a new place.

Braised Potato Local Taste of the Mountain

Mountain potatoes of Chengkou have been planted in the Daba mountain for several hundred years. Due to its unique natural environment, the local potato features big shape, thin peel, fresh color and tastes soft, smooth, light fragrance and slightly sweet. The local cook the potatoes in a special way: first select the smaller potatoes for peeling and washing, then put them into the pot, add a bit of salt, boil them till the steam disappears and take them out. Fry the lard oil of the preserved pork to 70-80 percent of the full fire, then put the boiled potatoes into the oil to stirfry. Till the water on the potato vanishes and the potato appears golden yellow, reduce the fi re to its 30 percent of the full fi re and bake the potato into crust slowly. Now the potato turns out to be bright yellow and gives off an appetizing smell. An indispensable side dish to the braised potato of Chengkou is “Pounded Pepper”, which is made from roasting the local fresh pepper with wood carbon fire and then pounding the roasted pepper into pieces with the local garlic. It would taste wonderful beyond description when eating the braised potato with the pounded pepper.

Turnip Roll of Qingcaoba, A Disappearing Delicacy

The producing skill of turnip roll has been an inheritance in Qingcaoba village of Hechuan for about 200 years, while not many villagers still make the turnip roll. It took over 20 days to turn the fresh turnip from the fields into the turnip roll with a process of sorting, rinsing, slicing and roll wrapping. The turnip must be big in shape and symmetrical, and the slices should be connected “end to end”. The turnip roll looks round and unique with both ends in the shape of a flower convolved by freshly pickled silk-like garlic bolt. Wrapped up with fresh gingers prickled by hot peppers and wild peppers, the turnip roll tastes salty ,crisp and refreshing which does good to digestion and appetite promoting.

Yuanyi Dried Bean curd Hundred-year Mellow Snack

In west Liangping county there is an old post house—Yuanbayi(now Yuanyi town). The stilted houses are scattered here with mountains, springs, forests around, making the town peaceful and quiet. Besides, the charming fl avor of Yuanyi Dried Bean Curd fl utters in the town, which has been popular for many years since its birth. Yuanyi Dried Bean Curd is produced with the traditional craft and scientifi c method: select high quality soybeans, soak in the water and fi lter, then grind into fi nes, next drop the soybean pulp by vibrating, boil the pulp with some water, then add over 20 spices such as the refined salt, brown sugar and cinnamon for marinating. Yuanyi Dried Bean Curd, with a history of 150 years, in the shape of matchbox, is soft and chewy. It has a lasting pleasant taste when being chewed slowly.

Youguozi Memory of Childhood

Can you still remember those Youguozi we ate at childhood? As a matter of fact, Youguozi is a traditional fried pastry snack in Fuling in a shape of a ball with am empty heart. Its producing process goes like this: blend the sticky rice powder with some sugar, water and ferment powder for fermentation, then wrap it with raw sesame. Thereafter, fry the blended dough in skimmer till it gets golden yellow. Take it out of the boiling oil and put them in a bunch with a bamboo stick. Each sweet fried fruit(Youguozi) is round and bright. In the color of brownish red, it smells of caramel with fragrant white sesame seeds on its surface and tastes agreeably sweet and delicious.

Three Snacks of Goodness Laoshe’s Favorite

When it comes to the snacks of Beibei, “Three Snacks of Goodness”—Bun of Goodness, Noodle of Goodness and Soup of Goodness cannot be ignored, which carry the spirit of Beibei city and humanistic feelings. Each snack is solely inherited from the older generation, which ensures the authentic original taste. Bun of Goodness is made up of the hand-made wrapper and fi llings of bacon, horse hoof and ham. And the traditional water noodle, ham sausage and chicken soup make the Noodle of Goodness. While the Soup of Goodness has such ingredients as dried seafood, eggs, mature vinegar and peppers.

In the middle of nineteen forties when Laoshe(a famous Chinese writer) was composing Four Generations Under One Roof in Beibei, his stomach went wrong and could not continue his writing. Having heard of the reputation of “Three Snacks of Goodness”, Laoshe’s wife bought the Soup of Goodness for him , and Laoshe loved it so much that he had his wife buying it frequently. “Ever since having the Soup of Goodness, Laoshe gradually restored his appetite and inspiration, thus finishing his famous novel.” In addition, Three Snacks of Goodness have good effect on anorexia person and the drunk. The appetite can be stimulated by taking soup and then taking the bun and the noodle. And the drunk can be relieved of the alcohol by drinking after eating the bun and then taking the soup thereafter. Everyone sings high praise for the Three Snacks of Goodness for its special effect on relieving the anorexia and alcohol.

Shen Bean Curd Natural Snack hidden in the Deep Mountain

This completely natural snack, in the color of jadeite and with a taste of light freshness and tender delicacy, melts pleasantly the moment it is put into the mouth. It is available only at Qianjiang in the seasons of spring and summer. “Shen Bean Curd” is mainly made from the leaves of dove trees which is similar to other common tree leaves in appearance but smells of a light herb fragrance. Shen Bean Curd is very helpful to your health because of the medical value of the dove tree leaves. It is produced in traditional craft: after rinsing the dove tree leaves, pinch and press the leaves till the pulp drips, then squeeze the cloth-wrapped leaves for juice. Last, blend the juice with plant ash of the traditional stove and water. When the mixed liquid freezes after the redundant water is got rid of , the Shen Bean Curd comes into being. It is especially tasty and refreshing with some hot peppers after being stored in the fridge in hot summer. This snack refl ects the wisdom of the local people who turn the unknown natural food material into a delicacy.

Gansu Cookie of Yushan Bringing You Back to Qing Dynasty

Yushan ancient town, northeast of Pengshui autonomous county, is always haunted with enticing aroma which comes from the wellknown Gansu cookie of Yushan. It was created about 200 years ago with a select of 20 ingredients such as quality malt sugar, sesame, soybean. Strictly following the ancient procedure, the snack is born out of 10 steps such as crisp making, fi lling making and baking. The hand-made Gansu cookie enjoys a feature of fragrance, sweetness, crisp and brittleness. One bite and slow tasting would instantly activate the gourmet’s degustator.

Huangshui in Shizhu County: Refreshing Huangshui with Sceneries Everywhere

The altitude of Huangshui is from 1,200 to 1,934 meters with great difference in vertical climate. The monthly average temperature in the hottest summer period is 21°C, and the forest coverage rate is 82%.

Located in the highland of Qiyao Mountain, northeast of Shizhu county of Chongqing, and in the very heart of Three Gorges reservoir area, Huangshui Forest Park is the youngest, the largest and the only minority tourism scenic area of the 5 national forest parks in Chongqing.

There are different Tujia minority customs and beautiful sceneries in the refreshing Huangshui. It enjoys plenty of tourist resources such as Dafengbao, the most beautiful forest of Chongqing, Qianye Grassland which is the most beautiful meadow in Chongqing as well as an international camping base, The Sun Lake and The Moon Lake of mountain lakes, Flower Capital in the Cloud of the mountain. Besides there are the gorge drifting, hot springs and karst caves in the park.

In summer you may feel waves of coolness even in the sunshine at Huangshui. The park is usually full of clouds and can impress you with a feeling of being in the heaven. It has a man-made lake with highest altitude, best water quality and most abundant in vegetation in southwest China. The lake is as tranquil as a mirror and can make you feel the ultimate scenery of the earth when you boat on it. There are natural-born islands in the lake and all forms of peninsulas around the lake. Forests and green grass cover the bank. The pure streams and springs from the mountains flow and babble, just like the sound of Guzheng played by the fairy.

Xiaonanhai in Qianjiang District: A Paradise of Picturesque Scenery

Qianjiang district is in the subtropical humid monsoon climate zone with obvious vertical change in climate. It is typical of mountain climate with annual average temperature of 15.4°C and annual average precipitation of 1,300 millimeters.

Xiaonanhai in Qianjiang is the ancient earthquake ruins best preserved in China. The quake broke out in the sixth year of Emperor Xianfeng of Qing dynasty. Being remote from the city, the ruins of the earthquake have been preserved completely.

Renowned as “Fairland on Earth”, Xiaonanhai is a barrier lake scenic area with sights of mountains, water, islands and gorges. In the center of the lake three islands are interspersed like stamens in the flower. The island named Laoheping in the central lake has a large number of pine trees and wild flowers. East to it lies a golden sands with pebbles in the shape of toads, which shows some unique joy of life. Named after the Chaoyang temple in this island, Chaoyang island is the second largest one in Xiaonanhai. On the island rare ancient wood iron tip Chinese firs grow prosperously. The green bamboo forest makes you feel like coming to the spirit mountain, while the old houses with farmlands around seem to bring you to the paradise on the earth.

The islands in the lake of Xiaonanhai makes a landscape by itself, in contrast with the glistening lake and the blue sky, a harmonious picture has ever appeared. The whole island covered with fl ourishing woods, tall bamboos and camellias is very fresh and cool even in the midsummer.
