摘要:對100只北京鴨Z2系公母鴨第六周體重與屠體性能及胸肌肌內脂肪含量的關系進行了相關分析。結果表明,Z2系母鴨第六周體重與胸肌肌內脂肪含量呈極顯著強正相關(P<0.01),相關系數為0.56;公母鴨第六周體重均與屠體重、全凈膛重、胸肌重、胸肌率、皮脂重、皮脂率呈極顯著強正相關(P<0.01)。綜合試驗結果可得出,由于北京鴨Z2系公母鴨第六周體重與屠體性能及胸肌肌內脂肪含量相關程度不同,在北京鴨選育過程中,要針對公母鴨分別制定育種目標,以加快北京鴨的選育速度,同時盡量避免肌內脂肪含量的降低。

Correlation Analysis of Body Weight with Breast Intramuscular Fat and Carcass Traits in the Pekin Duck Z2 Stain at Six-Week Age

Abstract: The weight, carcass traits and breast intramuscular fat of 100 male and female ducks were measured at six weeks of age to analyze the correlation between the body weight trait and carcass traits and breast intramuscular fat(IMF) in Z2 stain Pekin duck. The results showed that the body weight at six week age had significantly positive correlation with breast IMF in male ducks, with correlation coefficient of 0.56(P<0.01). While both male and female ducks showed significant correlation between body weight and carcass traits such as carcass weight, eviscerated weight, breast muscle weight, breast muscle rate, subcutaneous fat weight and subcutaneous fat weight rate(P<0.01). It indicated that the correlation coefficients of body weight trait with carcass traits and breast IMF were various between male and female in Pekin duck Z2 strain. It was necessary to establish different breeding projects for different genders in the Pekin duck breeding process to accelerate the breeding process and avoid the declining of breast intramuscular fat content.

許多研究表明,不同畜種間肉品質的特征性香味主要來源于脂肪,而沉積在肌肉中的脂肪是影響肉品質和風味的一個重要因素[1]。北京鴨是世界上優良的肉鴨品種之一。Z型北京鴨是經過多年選育形成的北京鴨新品系,其父系特點是生長快、飼料報酬高,母系以高繁殖力見長。隨著人們物質生活的提高,對優質禽類產品的需求增加,因此也加快了Z型北京鴨向瘦肉型的選育速度。在對瘦肉型北京鴨5年的選育過程中,一直以提高其胸肌、腿肌產量及瘦肉率,降低腹脂、皮脂含量為育種目標。但有關體重與胸肌肌內脂肪含量變化的研究還未見報道。本試驗對北京鴨Z2系公母鴨第六周體重與屠體性能及胸肌肌內脂肪含量的關系進行了研究,為瘦肉型北京鴨選育中盡量避免降低其肌內脂肪含量提供理論依據。……
