摘 要:隨著現(xiàn)代材料和生物科學(xué)技術(shù)的不斷發(fā)展,活性包裝應(yīng)時(shí)而生。活性包裝通過(guò)改變包裝環(huán)境來(lái)保持或改善包裝內(nèi)容物的特性,延長(zhǎng)貨架期,提高安全性和食品感官性狀。為了對(duì)肉產(chǎn)品活性包裝有一個(gè)更清晰明確的認(rèn)識(shí),本文對(duì)其進(jìn)行功能分類(lèi)、闡述各類(lèi)優(yōu)劣特征、并進(jìn)一步呈現(xiàn)各類(lèi)發(fā)展應(yīng)用現(xiàn)狀。結(jié)果表明:除異味保香型包裝并未投入太多研究;環(huán)糊精因其特有的空腔結(jié)構(gòu),在肉產(chǎn)品活性包裝方面將大有應(yīng)用前景;肉產(chǎn)品活性包裝的發(fā)展更趨于生態(tài)環(huán)保性。

Abstract: Active packaging technology continues to emerge from the development of modern material science and biotechnology. Active packaging can extend the shelf life of foods contained therein by changing the interior environment to maintain or even improve their properties, thereby enhancing their safety and sensory attributes. This paper provides a clear and definitive understanding of active packaging for meat products by describing classification by functions and the advantages and shortcomings of various classes as well as reviewing the current status of their development and application. From this review conclusions are drawn as follows: scarce attention has been paid to odor-removing aroma-holding packaging; cyclodextrin will have promising applications in active packaging for meat products due to its special cavity structure; and the future development of active packaging for meat products tends to be more eco-friendly.

隨著人們對(duì)肉產(chǎn)品質(zhì)量安全意識(shí)的不斷提高,利用科學(xué)材料與生物技術(shù)包裝肉類(lèi)制品,使其營(yíng)養(yǎng)流失小、保障安全,已成為食品包裝界關(guān)注的焦點(diǎn)。活性包裝的誕生提高了肉產(chǎn)品的質(zhì)量安全性、健康性,同時(shí)又控制了食品包裝帶來(lái)的污染。
活性包裝技術(shù)是結(jié)合先進(jìn)的食品包裝和材料科學(xué)技術(shù),通過(guò)調(diào)節(jié)包裝材料與包裝內(nèi)部氣體及食品之間的相互作用,最大程度地保持包裝食品品質(zhì)或改善食品安全性,有效地延長(zhǎng)商品貨架期的一種新型包裝技術(shù)。
活性包裝系統(tǒng)主要有2種形式:一是先將活性物質(zhì)裝于特制小袋中,再與食品一同于包裝中,發(fā)揮其作用;二是將活性物質(zhì)直接通過(guò)共混、填充或涂覆等方式融入包裝材料的體系中(薄膜、瓶蓋、襯墊等),再緩慢釋放起作用[1]。目前用于肉產(chǎn)品的活性包裝主要包括以下功能:脫/抑氧、抗菌、除味保香、控水等。……
