摘 要:數字技術是提升餐飲業(yè)供應鏈效率、優(yōu)化資源配置、應對未來挑戰(zhàn)的關鍵工具。以大數據、區(qū)塊鏈、人工智能等數字技術實現(xiàn)的科技賦能對餐飲行業(yè)的變革作用愈發(fā)凸顯,已成為驅動餐飲業(yè)供應鏈深度發(fā)展的新動力。因此,文章深入分析信息識別技術、大數據技術、物聯(lián)網技術、區(qū)塊鏈技術、生成式人工智能等數字技術在餐飲業(yè)供應鏈中的應用現(xiàn)狀和現(xiàn)存問題,并探索數字技術在餐飲業(yè)供應鏈中的發(fā)展對策,從而為餐飲業(yè)數字化供應鏈的構建以及餐飲行業(yè)的可持續(xù)發(fā)展注入新的動力。

Abstract: Digital technology is a crucial tool for improving the efficiency of the catering industry's supply chains, optimizing resource allocation, and addressing future challenges. The technological empowerment achieved through digital technologies such as big data, blockchain, and artificial intelligence has become increasingly prominent in the transformation of the industry, and has become a new driving force for the deep development of the catering industry's supply chains. Therefore, in-depth analysis of the application status and existing problems of digital technologies such as information recognition technology, big data technology, Internet of Things technology, blockchain technology, and generative artificial intelligence in the catering industry supply chains is needed to explore the development strategies of digital technology in the catering industry supply chain, in order to inject new impetus into the construction of digital supply chains in the catering industry and the sustainable development of the catering industry.

2021年12月國務院印發(fā)的《“十四五”數字經濟發(fā)展規(guī)劃》中明確提出,要促進數字技術與實體經濟深度融合,加強數字基礎設施建設,強化企業(yè)數字化整體思維,加快企業(yè)數字化轉型升級。餐飲業(yè)是我國的支柱性產業(yè),是實體經濟的重要組成部分,也是數字經濟與實體經濟融合發(fā)展的重要領域。面對競爭日益激烈的餐飲市場,不管是從保證源頭食材的質量、降低運營成本,還是提高客戶忠誠度等角度出發(fā),完善餐飲供應鏈已成為了保障餐飲業(yè)持續(xù)發(fā)展的核心關鍵點。但是,目前我國餐飲業(yè)的供應鏈尚處于發(fā)展階段,整體體量偏小,但其重要性日益突出,正逐漸成為餐飲企業(yè)競爭力的關鍵組成部分。因此,利用數字技術,實現(xiàn)數字化、智能化供應鏈的轉型升級,構建從供應商到總部、區(qū)域、門店全價值鏈采購管控平臺,加強不同業(yè)務間的多方協(xié)同,全面提升餐飲業(yè)供應鏈運作效率顯得至關重要?!?br>
