摘 要:高校食品類專業是一門極其注重操作技能培養的學科。在學生的人才培養方案中,實訓教學占到較大的比重,通過系統的實訓課程可以鍛煉學生的實操能力,有利于培養其專業技能。食品類實訓室是實訓教學工作的主要場所,因此保障實訓室安全是一項需要長期推進的工作。本文結合重慶輕工職業學院食品類實訓室的安全建設工作,圍繞強化安全意識、建立健全安全制度、加強實訓過程中的安全管理等方面展開探討。

Abstract: The food major in colleges and universities is a discipline that attaches great importance to the cultivation of operational skills. In the talent training program of students, practical training and teaching account for a large proportion, and the practical ability of students can be exercised through systematic practical training courses, which is conducive to cultivating their professional skills. The food training room is the main place for training and teaching, so ensuring the safety of the training room is a work that needs to be promoted for a long time. Combined with the safety construction of the food training room of Chongqing Vocational College of Light Industry, this paper discusses the aspects of strengthening safety awareness, establishing and improving safety systems, and strengthening safety management in the training process.

高校的教學目的是培養高素質專業人才,更加注重學生實踐能力的提升。大部分高校都有實驗實訓室,學生會在實訓室中開展相關實驗,尤其是食品類專業,實驗實訓課程更多。各大高校對實訓室安全問題較為重視,且主要聚焦于工科實訓室,沒有大型工程實訓設備、沒有危化品的食品實訓室容易被認定為相對安全、不容易出現安全事故的實訓室。食品類實訓室由于其專業特點,有些特殊的安全隱患容易被忽視,需要高校加強重視。
1 高校食品類實訓室安全管理現狀
1.1 安全管理制度不完善
合理的安全管理制度是保障安全的前提,實訓室安全制度要涵蓋安全建設的各個方面,同時也要聚焦某些具體問題,不可大而化之。傳統的管理制度沒有將責任明確到個人,管理混亂,分工及責任不明確,導致實驗室安全問題頻發。因此,相關單位應及時完善安全管理制度,同時聯合多部門齊抓共管,務必要讓各項制度都落在實處。……
