摘 要:隨著植物蛋白飲料市場的高速發(fā)展及飲料原料價(jià)格的上漲,在生產(chǎn)加工中摻入廉價(jià)的植物蛋白粉或非產(chǎn)品標(biāo)識(shí)的植物原料,損害了消費(fèi)者的合法權(quán)益,同時(shí)給食品安全帶來一定風(fēng)險(xiǎn)。因此,有必要對(duì)植物蛋白飲料摻假鑒別技術(shù)進(jìn)行分析,探討植物蛋白飲料源性成分的新型高通量或絕對(duì)定量分析技術(shù)的研究和應(yīng)用現(xiàn)狀,促進(jìn)新型數(shù)字聚合酶鏈反應(yīng)技術(shù)和微流控技術(shù)開發(fā)和應(yīng)用,實(shí)現(xiàn)對(duì)植物蛋白飲料摻雜使假行為精準(zhǔn)高效鑒別。

Research Progress on Adulteration Identification Technology of Vegetable Protein Beverages

Abstract: With the rapid development of the vegetable protein beverage market and the rising price of beverage raw materials, the cheap vegetable protein powder or plant raw materials other than product labels were adulterated in production and processing. The legitimate rights and interests of consumers were damaged, and the new food safety issues were introduced. Therefore, it is necessary to analyze the plant protein beverages adulteration identification technology, and explore the application of high throughput identification technology or absolute quantitative analysis technology. As the new digital polymerase chain reaction technology and microfluidic technology will be rapidly developed and applied, and achieved accurate and efficient identification of adulteration for vegetable protein beverages.

植物蛋白飲料是以植物果仁、果肉及大豆為原料(如花生、杏仁、核桃仁和椰子等),經(jīng)加工、調(diào)配后,再經(jīng)高壓殺菌和無菌包裝制得的乳狀飲料,其不含或含較少的膽固醇,富含蛋白質(zhì)、氨基酸及適量的不飽和脂肪酸,營養(yǎng)成分較全面,深受消費(fèi)者歡迎,已成為飲料市場上不可或缺的產(chǎn)品[1]。統(tǒng)計(jì)數(shù)據(jù)顯示,2007年以來各飲料子行業(yè)增速最快的是植物蛋白飲料,2016年植物蛋白飲料行業(yè)收入為
1 217.2億元,2020年植物蛋白飲料市場高速發(fā)展,增速高達(dá)800%,購買人數(shù)上升900%,銷量增速遠(yuǎn)超其他飲料品類,在飲料市場中成長貢獻(xiàn)15.5%,排名第3。隨著植物蛋白質(zhì)飲料原料價(jià)格的上漲,部分生產(chǎn)企業(yè)為降低生產(chǎn)成本,在飲料中摻入廉價(jià)的植物蛋白粉,或摻入成本低廉的非產(chǎn)品標(biāo)識(shí)的植物原料,如央視在2018年“3·15”晚會(huì)中,曝光了多家企業(yè)在生產(chǎn)核桃露時(shí)未使用核桃漿,而使用成本遠(yuǎn)低于核桃漿的花生醬或核桃香精代替,上述行為嚴(yán)重?cái)_亂社會(huì)市場秩序,損害消費(fèi)者的合法權(quán)益。……
