


At present, when it comes to food, chemistry has almost been a derogartory term in some peoples mind. As a matter of fact, chemistry is the most important scientific foundation for food science. Six major nutrients are well-known to be very necessary for human body, including carbohydrate,fat, protein, vitamine, water and mineral salt, all of which are chemical matter in essence, and the names of them are typical of chemistry term. Such food and their ingredients that we are familiar with as common salt,cane sugar, glucose, fructose, newtol, sodium bicarbonate, nonosodium glutamate,magnesium chloride and others, they are all chemical matter in nature.
The nutritioin and safety of food are the key factors for food itself, while nutrition of food has a close tie with chemistry. In fact, various types of nutrient substance is chemical matter. The commonly-used nutrient supplements, such as vitamin A, vitamin B1, vitamin B2, vitamin B3, vitamin B6, vitamin B9, viatamin B12, vitamin C, vitamin D3, vitamin H, vitaminK, magnesium chloride, calcium carbonate, ferrous sulfate, zinc sulfate, potassium citrate, copper sulfate,manganese sulfate, sodium selenite, arachidonic acid grease, choline chloride, inostitol, taurine, Docosahexaenoic Acid, DHA grease, D-calcium pantothenate, all of them are also chemical matter, and they are frequently-used ingredients for infant formula. As for the issue of food safety, it can not separate from chemistry, even the carbondioxide can be used as food antiseptics, commonly used in the antiseptic of such food as beer, cola, soda and others.
The color, aroma and taste are the soul of food. But some of them are existed in the original food, some are produced by their processing movement, others are added by human, but they are all of chemical substances. The fragrance and taste of daily bread, rice, fruits, vegetables, cooked food, coffee, tea is concurrent effect of thousands of chemical matters.
In addition, food additives are chemical substances. It is a commonly accepted truth that without food additives, then there is no such modern food industry in the world. Beta carotene and xanthophyll serve as both pigment of food and nutrient supplements, and vanilin and ethyl vanilin are major elements of the flavor of vanilla, maltol and furanone are major substances of the taste of caramel, all of these can be classified into the category of food additive. The above-mentioned chemical substances are mostly food addtives. Up to now, there are no food safety affairs that damage human body in China caused by the rightful use of food addictives. Elements like melamine, tony red, clenbuterol and others are all illegal addictives, none of them can be classified into food addictives. It is of vital importance to uphold food safety and reduce public alarm by correctly distinguishing food addictives and illegal addictives. There is no food science without science of chemistry, without the development and support of chemical science, food and food industry could not develop to such a high level. It is no exaggeration to say that without science of chemisty, we wont lead a modern civilized life.
