摘要:以金銀木(Lonicera maackii)果實為原料提取紅色素,分析了不同提取溶劑對金銀木果實紅色素提取的影響,并考察了金銀木果實紅色素的穩定性。結果表明,金銀木果實紅色素最佳提取溶劑為pH 1的乙醇溶液。該色素在酸性條件下穩定性較好,中性和堿性條件可使其顏色發生變化;在黑暗和自然光照下穩定性較好,日光直射對其穩定性略有影響,應避免長期日光直射;80 ℃以上時熱穩定性較差;Na+、Mg2+、K+對金銀木果實紅色素穩定性無明顯影響,Al3+、Ca2+對其有增色作用,Fe3+、Cu2+會使其變色,應避免其與鐵、銅制品接觸;氧化劑H2O2和還原劑Na2SO3均會導致色素提取液吸光度下降;蔗糖、麥芽糖、葡萄糖、檸檬酸、山梨酸鉀、苯甲酸鈉等食品添加劑在一定范圍內對紅色素無明顯影響,可在食品加工允許范圍內使用。

Study on Extraction and Stability of Red Pigment from Lonicera maackii Fruits

Abstract: Fruits of Lonicera maackii were used as material to extract natural red pigment. The effects of different extract solvent on extraction of red pigment as well as stability of the obtained pigment were investigated. The results showed that the pigment was water-soluble; and the best extraction solvent was ethanol with pH 1. The pigment had good stability under acidic conditions, dark or natural light conditions; but the color changed under neutral or alkaline conditions; and direct sunlight had slight effect on its stability. The red pigment was unstable when the processing temperature was above 80 ℃. Some metal ions such as Na+, Mg2+ and K+ had little effect on the pigment; Al3+ and Ca2+ had certain hyperchromic effects; while Fe3+ and Cu2+ had obvious destructive effects. Oxidizer H2O2 and reducing agent Na2SO3 caused the decrease of absorption of red pigment extract. Food additives such as sucrose, maltose, glucose, citric acid, potassium sorbate and sodium benzoate had little effect on the stability of pigment in a certain range and thus could be used in allowable range.
